When the Old Testament/Hebrew Scriptures were written, people generally thought the earth was flat, including the prophets who had "visions" of omniscient God, creator of the universe. Does this mean the "visions" were something else? Is this why the Catholic church persecuted Galileo?

The beatific vision simply means being in God’s intimate presence, and - to use the biblical expression - seeing Him "face to face". No, no-one knows exactly what that will be like.
